Joy of Desserts does a weekly meme hosting vintage recipes. She took a bit of a summer blog break, but now she's back. In the interim, I promised blog friend the Chicken Wrangler (click HERE to visit her) that once she did, I would post my favorite deviled egg recipe.
It's from my grandmother's cookbook, For the Love of Cooking.
Deviled Eggs with Cheese
6 hard cooked eggs
1/4 cup shredded sharp cheese
1 dill pickle, finely chopped
1 tbsp finely grated onion
5 tbsp mayonnaise
2 tbsp prepared mustard
paprika and parsley
Cut eggs in half; remove yolks and place in small mixing bowl. Mash egg yolks and blend with cheese, pickle, onion, mayonnaise, and mustard. Stuff egg whites with mixture and garnish with parsley and paprika (oops, I forgot the garnishing part!)
Yield: 12 servings

I'm weird, I like boiled eggs but not the yolk part of it, so I don't eat deviled eggs.
