My Homemade Gluten Free Granola Bars Recipe with Udi's Granola

More and more I've noticed gluten free products in the grocery aisles. On several occasions, I've adapted recipes to be gluten-free for social events, because I knew someone there was unable to tolerate gluten. As people began to examine their health more closely, I think gluten free products will become even more commonplace.

I was excited to try one of Udi's products for the first time. We love to try new things at my house, and especially enjoy those that are healthy. I picked up Udi's vanilla granola at my local grocery store.

I decided to make my homemade granola bars - gluten free! A few years ago, I had a granola bar cookoff at my house (we seem to really love granola bars) and I made 7 different types. We had a taste off and the recipe below is an adaptation of our favorite from the 'granola bar weekend'.

Ingredients:
1 1/2 cups Udi's granola (any flavor - I used vanilla)
1 cup old fashioned oats*
1/2 cup dried cherry cranberry Craisins
1/2 cup dried blueberries
1/2 cup white chocolate chips
1/2 cup gluten free all purpose flour
1/3 cup slivered almonds
1/2 tsp ground cinnamon
1 egg
1/3 cup honey
1/4 firmly packed brown sugar
2 tbsp. vegetable oil

*Most oats contain very small traces of gluten. If you are on a gluten free diet due to a health condition, be sure to use gluten-free oats.


Spray 9x9 inch baking pan. Preheat oven to 350*. Combine ingredients in a large bowl until everything is well coated. Press evenly into pan. Bake 20-25 minutes until golden brown. Allow to cool completely, then cut into bars.

My boys really enjoyed these bars and we couldn't tell they were gluten free. It was fun to find a way to make our granola bars even more wholesome, and we look forward to taking them on hikes in the milder spring weather.
