English Toffee Recipe

There are very few recipes that I am willing to break out the thermometer over.  This is one of them.  The caramel is so soft and gooey and sweet that it is well worth the effort. 
 The recipe is my aunt Carolyn's.  I challenge you to find a more decadent English Toffee recipe.  Seriously.  It is THAT good! 

Ingredients:
1 cup butter
1 lb. brown sugar
dash of salt
1 cup light corn syrup
1 15 oz. can sweetened condensed milk
1 tsp vanilla

Melt butter in heavy saucepan.  Add sugar and salt; stir thoroughly.  Stir in corn syrup, mix well.  Gradually add the milk, stirring constantly.  Cook and stir over medium heat to firm ball stage (245 degrees).  This will take 12-15 minutes.  Remove from heat, stir in vanilla.  Pour into buttered 9x9x2 inch pan.  Cool and cut into squares.  If you plan to give it away, it does well wrapped in individual pieces of wax paper.

  2. oh yum, i pinned it! i'm going to try this and while i have the candy thermometer out i'm going to make popcorn balls. my mom and grandma used to make them every christmas, red and green ones!

    I make a lot of holiday treats and send them onward to many people. Such as my work my husband's work, preschool, teachers and my husband's family.

  13. Oh yum, this is a marvelous picture, too. In my warped thinking, I would slurp it all up before it was cooled, or maybe dump it all over vanilla ice-cream!

  15. Oh Wow--did this ever bring back memories. My Mom made this stuff every year at Christmas when I was growing up. We gave it to teachers, etc. as gifts... My job was to cut and wrap it in Wax Paper... I even have an old picture somewhere of me doing that... Need to find that picture...
