I make soup pretty frequently in the winter. Luckily, the boys generally like soup. Recently I tossed together a new recipe and was quite pleased with the results.
Ingredients:
1 lb. smoked sausage, diced
1 large onion, chopped
2 large carrots, diced
1 celery rib, diced
5 cups broth (I used chicken)
1 14 oz. can navy beans, drained
1 tsp basil
9 ounce package fresh spinach
1/2 cup orzo
1 tsp basil
30 ounces canned diced tomatoes
5 cloves garlic, minced
Saute garlic, onion, carrots, and celery in a tablespoon of olive oil, in a large stew pot until tender. Add all other ingredients (except the spinach) and bring to a boil. Reduce to simmer and cook for 7 minutes. Add spinach and simmer 3 more minutes until spinach is gently wilted and orzo is tender.
It turned out wonderfully, and we had plenty of leftovers to eat for lunch the next day. That's win-win in my book!
Yum! I love soup, and actually anything sausage I love (although I try not to eat it often!). Is this kielbasa? Or another type of smoked sausage? I would love for you to link up at what i am eating :-) http://www.townsend-house.com/2013/02/what-i-am-eating_22.html
ReplyDeleteNothing like good soup in the winter !! This one looks great !!! I will be trying this one
ReplyDeleteHope you have a wonderful day Lisa !
Oh Lisa this looks good I make mine the same way but use Kale from my garden still:) We love soup. B
ReplyDeleteOh yum, this looks delicious Lisa!
ReplyDeleteSounds and looks great!
ReplyDeleteThat soup looks GREAT!! I make my Hubs a Zuppa Toscana like The Olive Garden.... but yours looks much better.
ReplyDeleteLooks tasty. I'd have to mod it though for my son, who has a terrible tendency to gag horribly on spinach, especially wilted spinach. I think I'd shred up some cabbage to replace it.
ReplyDeleteThis looks yum! I make oodles of soup, as my 2 year old just stares at veggies on his plate, unless they are in a soup. He gobbles up soup no matter what is in it!
ReplyDeleteI am a huge soup fan too. It is economical to make and is comforting when it is cold outside.
ReplyDeleteMy husband and I would love that - but no one else would eat it - will your kids eat that healthy soup? Dang - wonder what I did wrong...
ReplyDeleteThis looks delicous! I would love a bowl.
ReplyDeleteLooks yum! You know I don't do sausage but the rest? Mmmn.
ReplyDeleteLisa, This looks really hearty and delicious, and I love how you made up the recipe too. I love to go into the kitchen and improvise every once in a while-it seems less intimidating than following some complicated recipe. I'll write soon, my friend:) xx
ReplyDeleteSounds good. I am a soup person - spring, summer, fall and winter is a good time for soup in my book. :)
ReplyDeleteThat looks really good. I can almost smell the flavors!
ReplyDeleteSounds good to me!!!!
ReplyDeleteThis looks healthy, delicious and easy. Well, I guess using turkey sausage would make it healthy. Thanks!
ReplyDeleteLooks delicious on this chilly day!
ReplyDeleteI love soup. I don't make it near enough. My sister has this amazing yummy spicy, sausage kale soup. Uggghhh now I want her to make it for me. LOL
ReplyDeleteVery nice, it beats the frozen pizza I just pulled out.
ReplyDeleteSounds really good and would be great on this icy day!
ReplyDeleteI can almost smell it from here! Looks wonderful (still cold and snowy here.)
ReplyDeleteWe love soup in the winter also, Lisa. Yours sounds delicious. Thanks for the recipe.
ReplyDeleteHugs,
Betsy

Yum, this looks delicious! I'm such a fan of soup!!
ReplyDeleteYour soup sounds amazing. I might try to make it this week if I can get my hands on some smoked turkey sausage since my family do not like pork sausage.
ReplyDeleteWow! Sounds tasty for something that's so rich in vitamins!
