In early November I mentioned how much I was looking forward to my Dad's oyster stuffing on Thanksgiving, and several readers asked me to post the recipe. It took me a little while, because I wanted to have pictures to include. But I'm finally ready to share his secrets!
Ingredients:
1/2 cup butter
1 large onion, chopped
6 green onions, chopped
3 stalks celery, chopped
3 1/2 cups crumbled cornbread (my mom makes this from scratch)
3 1/2 cups soft bread crumbs (my mom makes a French bread from scratch)
1/2 cup chopped fresh parsley
salt and pepper to taste
3 large eggs, lightly beaten
2 pints shucked oysters, drained
1/2 cup oyster liquid, drained from oysters
Preheat oven to 350 degrees. Saute onions and celery in 3 tbsp. butter until wilted but not browned. Combine cornbread and bread crumbs in large bowl; mix in sautéed onions, salt and pepper, and parsley. Add beaten eggs and toss more; moisten with oyster liquid until moist but not soggy. Add oysters.
Pat the mixture into a lightly buttered 12 x 15 rectangular cake pan. It should make a 1 inch layer. Dot with remaining butter and bake 45 minutes, until golden brown and set in the center.
You house will start to smell delicious! Enjoy the oyster stuffing - I always do!

I can imagine how good that must have smelled. I rarely get oysters anymore as they are so expensive and you don't want to be buying old ones, yuk. Anyway, they are such a good holiday treat.

I have never tried oyster stuffing, but on Christmas Eve my inlaws do the 7 fishes and this would be a great addition.

And I have been asking anyone and everyone for a stuffing recipe, my hubby suggested an Oyster 'farcie' stuffing-this is perfect, he does our baguettes and will shuck the Oysters and I think I can do the cornbread :-), glad you shared this. Great photo of your Dad!
As I don't like oysters, I'd replace it with chicken. But it surely looks delicious for oyster fans!

Sounds good, except for the oysters part! Never did develop a liking for oysters or clams. I'd likely substitute ground sausage, or maybe chopped nuts.
He uses quite a few ingredients and takes his time, it must be delicious!

Oyster dressing was always made by my Mother for the holidays and now we carry on the tradition too!

Well dang! I wanted to have oyster stew for our Christmas - which we celebrated on Sunday, but when I asked my daughter if she knew of a good recipe, she said "no" in a tone that meant she didn't intend to ever have a recipe for one.
I am saving this for next year. It won't kill us to try something new : )

This is so similar to my grandmother's oyster stuffing. I loved it, but I confess to picking out the oysters. Have never liked them! But yummy otherwise. :)

That looks so delicious... My son made oyster dressing one year for Thanksgiving Dinner --and I loved it. BUT--that's the only time I've had it. I do love oysters though --so would LOVE it...
