Coconut Almond Bundt Cake Recipe

The boys were complaining recently because we didn't have any homemade desserts in the house.  I daresay they might be a bit spoiled in that regard.  We eat very healthy, and get plenty of exercise, so there is really no reason to ever skip dessert.

I tossed together a new recipe, and it turned out to be so light and fluffy and flavorful.  It starts with a cake mix, but you will never know it when you taste this cake!  I had several requests on Instagram for it, so I knew I was going to have to share it on the blog.


Ingredients:
1 box yellow cake mix
1 box (3.4 oz) instant white chocolate pudding mix
1 cup light sour cream
4 eggs
1 tsp. almond extract
1 tsp. coconut extract
1/2 cup vegetable oil
1 cup milk (I used skim)
1 1/2 cups shredded coconut

Directions:
Preheat oven to 350*.  Mix first 8 ingredients for 2-3 minutes, until well blended.  Stir in coconut.  Pour into greased bundt pan and bake for 55 minutes.  Allow to cool 15 minutes before turning out on plate to cool completely. 

This is wonderful topped with strawberries!  Enjoy.

  2. Yummers, this is the 2nd cake recipe today. I don't need much of a push to make desserts. I love my sweets, they just are catching up to me over the winter.

  12. This does look good! I just made cookies for my husband on his last day of work for this Thursday. I still have to decorate them, and they'll go in the deep freezer until it's time to take them.

  16. Oh, I can't look! Hubby is fasting for his colonoscopy tomorrow. It's been so hard cutting out eggs, dairy and yeast for him ,too.

    I recently made a really good cupcake using yellow cake mix and some crushed pineapple (12 oz).... Delicious...

  26. Sounds delicious. Any dessert with coconut and almond flavor mixed with white chocolate pudding would be on my A-list. We'll be baking this weekend for Valentine's Day, but the goal is to give most of the brownies and cookies away...(since I virtually have negative will power to stay away...)

  28. WOW~! your boys are growing up so fast.. IT's so cold here in Iowa.. Went outside this morning to feed the birds.. Ouch~!! the wind and cold~!~!
    I quickly got done and went inside.. I use a product called Aquaphor for my dry skin.. It is fragrant free and is a great product..I like it better than Vaseline.. You might give it a try...
    Haven't blogged in a long time.. Just like stopping by once in a while to see how you are all doing. You are lookin good~!~~
