Grasshopper Pie Recipe

With St. Patrick's Day on the horizon, it is time to break out some 'green' recipes.  I have a funny story about this one.  It was a favorite dessert that my mom made when I was a kid.  I took the recipe with me to college, and tried to replicate it.  I did not know what crème de menthe was, and thought I could substitute mint extract.  Now, the recipe calls for FOUR tablespoons of crème de menthe.  That's basically an entire bottle of mint extract.  As you might imagine, it was quite inedible!  I called my mom afterwards, and she laughed and explained that crème de menthe was a liquor.  I wasn't 21 yet, so the recipe was set aside for a while. 

Never fear, readers.  This is actually a very easy recipe, assuming you know the difference between crème de menthe and mint extract!


Ingredients:
Crust - 1 1/4 cup chocolate wafer crumbs and 1/3 cup melted butter (or just use a store bought crust if you don't want to mess with this).
24 large marshmallows
1/2 cup milk
1 package of Dream Whip, prepared
4 tbsp. crème de menthe

For the crust, mix and press into a buttered pie plate.
For the filling, dissolve marshmallows in hot milk over a double broiler.  Cool.  Prepare Dream Whip and add crème de menthe.  If desired, add extra green food coloring at this point.  Combine the two mixtures and pour in crust.  Top with crème de menthe chocolate pieces and freeze. 

It was fun to share this with the boys, as they loved it every bit as much as I did as a kid.

  3. one of the first cooking tasks we were given as kids was to learn to make desserts. apple crisp was a standard in our household. i once misread the recipe and put in 1/4 cup salt instead of 1/4 teaspoon. the barn cats wouldn't even touch it.

  4. Looks really good! Do you think I could substitute Cool Whip for the Dream Whip? That is just how lazy I am! I will try and see what happens, it looks divine. What a funny story!

    Many years ago I decided to make potato soup the way I thought my mom made it. But instead of using evaporated milk, I used condensed milk. Sweet soup is not good! Then I tried to drain the liquid and start over with the same potatoes. Of course, the potatoes had absorbed the sweet milk, so the soup could not be salvaged. lol

  12. YUM! Love the story. We used to make Mac 'n Cheese without the milk when we were in college. Wasn't so "creamy", but we were starving, so we ate it anyway.

  13. My first apartment: I had my parents and an aunt visiting. So, I tried to make Bulgarian Pita--sheets of dough with cottage cheese and butter--baked. They were howling at how badly I bungled it. But there was lots of laughter!

  16. Hum. I once put a can of c-ration beef stew on a rock by a camp fire but forgot to punch a hole in the top. It blew up and threw stew all over the fellows cooking by the fire. This made me unpopular for a bit.

  19. Once I was draining boiled potatoes with a lid that had holes in the top. Somehow the lid came away from the pot and all the potatoes went into the sink. My daughter was helping at the time and told me to just put them back in the pot and she wouldn't tell a soul. I had just scoured the sink so I reluctantly followed her advice, but I felt guilty as I watched everyone consume the mashed potatoes.
