Ingredients:
1 12 oz. bag frozen corn, thawed
1 15 oz. can pinto beans, rinsed and drained
1 14 oz. can diced tomatoes, drained
4 oz. fresh spinach
1 medium zucchini, diced
1 4 oz. can chopped green chilis
2 cups shredded cheddar
1 cup shredded Monterey Jack cheese
12 8 inch flour tortillas
1 cup green enchilada sauce
Preheat oven to 400*. Spray two baking pans with cooking spray. In a bowl, mix corn, beans, tomato, zucchini, chilis, spinach, 1 cup cheddar, and 1/2 cup Jack.
Divide filling among tortillas, roll up and arrange seam side down in baking dishes (I tend to use a 3 quart pyrex for one batch, and an aluminum casserole dish that I can wrap in foil and a big ziploc for my freezer batch.
Top each with enchilada sauce. Sprinkle with remaining cheese. Bake uncovered for 30 minutes.

Favourite Mexican food? The kind you can eat! lol Honestly, though, it would be a toss-up between tamales and ceviche. Your recipe looks delicious and, since I'm making more vegetarian meals, will definitely be made... and soon!

Texas is a place I'd like to visit some time. I watched a documentary the other night and it was set in Galveston Texas which looked incredible.

I like enchiladas , but we rarely have them. We don't make our own from scratch, don't like the frozen grocery store variety, and there are no mexican restaurants here. So we only get them when we are out of town.
I'm not a fan of Mexican food, but did have my first enchilada on my birthday, and it was very good. Not as good as you made though. That looks and sounds delicious. :)

This is SO healthy!! I make quesadillas. I also like burritos and fried ice-cream! Hmmm, I guess Spanish Rice does't count? Alright, then I will call it Mexican Rice. I make that a lot.

Hi, I love Mexican (and Tex Mex--since I lived in Texas for 12 years).... My hubby is 'iffy' about Mexican --so we don't have it often. I have a delicious Taco Soup recipe which he does like. AND--when we go to a Mexican Restaurant, we always get Fajitas for Two (Chicken)... YUM...

I have a recipe for chicken enchiladas.
They have green chili's, enchilada sauce (I trade off from green and red), olives, chopped onion, chicken, cheddar cheese, and sour cream in the recipe, which I replace with plain Greek yogurt.
