While a few things are left from last year (not listed in my inventory below - 2016 had its own inventory list), much of the jars in my picture are current. Here are the things I canned in 2017:
16 pints Boston baked beans
14 pints butternut squash
10 quarts, 1 pint chili
18 pints green beans
8 1/2 half pints blueberry jam
8 pints corn
38 1/2 pints apple butter
14 quarts apple pie filling
52 pints applesauce
6 quarts black bean soup
6 pints crushed tomatoes
8 quarts chicken and veggie soup
30 half pints of autumn olive jelly
I'd love to can more black bean soup at some point. We will miss not having home canned salsa or pickles this winter, but hopefully next year will be a better one for gardening.
Readers, what's your favorite home canned food?
...all that I did so far is some dill pickles.

ReplyDeleteI have only canned some tomatoes and grape jelly but I have some tromboncini squash if something doesn't eat them, I will get one to you if you want one.

You always have a nice larder full. It is so nice to enjoy during the cold months, plus soups already for a quick meal sound nice.
ReplyDeleteYou are so NEAT. You have them all organized in boxes. How long does canned food last? Does it depend on the type of food? This is a whole lot, considering the weather was not the best. One of Phil's favorite foods is black bean soup.
ReplyDeleteAmazing collection you have there, well done, despite an iffy garden season. All I did this year was a big jar of refrigerator pickles that were BLEH!.. and about fifteen jars of jam (peach blueberry and blueberry lime) that are good.

Congratulations Lisa! Unbelievable to have canned such a delicious amount of food for winter. Makes my ten remaining jars of fig/strawberry jam look pathetic! I've shared another dozen of so with friends and neighbors. . . . . . . that was it for me this summer.

ReplyDeleteI canned several quarts of tomato products ( whole, stewed, chutney). I made some watermelon rind pickles as well as some peach pickles. I have been freezing a lot more stuff as I have plenty of room. I have frozen green beans, Jalapenos, tomatoes, green peppers, green tomatoes, okra, Hubbard squash puree, sweet corn and am making pumpkin puree today.

I'm slowly learning to trust myself with one. It's not hard, but my Mom never did anything that needed pressure canning, so it's a relatively new thing for me.
As far as my favorite thing to can? I love to make banana pickles, but my cucumber plants wilted early on this year and I only got one batch. My tomatoes, however are another story. I had 6 plants, and I lost track of how many 5 gallon buckets of tomatoes I got! I made 5 batches of salsa and some tomato soup concentrate, and gave the rest away!
My mom used to can everything for winter, including meat. Sometimes she would use a big iron skillet to fry porkchops and then keep pouring the grease into a crock setting on the floor until she had covered the pork chops with the grease. Later, in the winter, she would dig out two pork chops and keep the grease and warm them up in a skillet on the cook stove in the kitchen. That was how she kept meat most of the winter. Everything we grew in the vegetable garden was canned in Mason canning jars with lids that popped when the jar was sealed. She also had blue glass canning jars with a matching glass lid and a kind of latch on it that after you filled the jar with hot vegetables she closed the jar with the glass top and snapped the metal latch shut.
